RECIPE: EASY OAT & BANANA PIKELETS

Ingredients (makes approx 12):
1 large very ripe banana
1/2 cup milk/ plant- based milk (we used almond)
1 egg/ chia egg
1/2 cup rolled oats
1/2 cup wholemeal flour
1 teaspoon baking powder
Pinch of cinnamon
1 tablespoon butter/ margarine (we used nuttelex)

Method:
• Mash banana in bowl and stir through milk and egg
• Fold through oats, flour, baking powder and cinnamon
• Heat butter in large fry pan and cook until golden on each side

🍓 Serve them on their own, with some fruit purée or a little honey or maple syrup 🍯

They’re also freezable ❄️ Winning!
