Easy Oat & Banana Pikelets: A Perfect Snack for Your Little One’s Eco Plate

As parents, choosing recipes that are not only healthy but also complement sustainable mealtime habits is important. Serving these oat and banana pikelets on our EcoCubs eco plate is a simple way to make snack time kinder to both your child and the planet.

Easy Oat & Banana Pikelets

Ingredients (makes approx 12):
1 large very ripe banana
1/2 cup milk/ plant- based milk (we used almond)
1 egg/ chia egg
1/2 cup rolled oats
1/2 cup wholemeal flour
1 teaspoon baking powder
Pinch of cinnamon
1 tablespoon butter/ margarine (we used nuttelex)

Method:
• Mash banana in bowl and stir through milk and egg
• Fold through oats, flour, baking powder and cinnamon
• Heat butter in large fry pan and cook until golden on each side

🍓  Serve on your child’s favourite eco plate with fruit purée, or a little honey or maple syrup for a naturally sweet treat.  

🍯 Bonus: These pikelets freeze beautifully for easy snacks on busy days!
